Sesame Edamame Salad
Salad
½ cup red cabbage, chopped
1 ½ cups green cabbage, chopped
1 carrot, julienned or grated
1 red bell pepper, cut into strips
1 cup edamame
½ cup cilantro
1 green onion, chopped
½ cup Teriyaki Uncrouton™
Sesame Vinaigrette
1/4 cup olive oil
2 tbsp. rice vinegar
2 tbsp. honey
1 tbsp. Tahini
1 tbsp. soy sauce
1 tbsp grated ginger
1 tsp. toasted sesame oil
1 tsp. sriracha
1 clove garlic, minced
1. Prepare the dressing: In a large bowl, add all of the ingredients for the dressing. Mix with a whisk.
2. Add the chopped cabbage, carrot, bell pepper,edamame, coriander and green onion. Mix well. Top with the Uncroutons™ and serve.
